We use steam from a steam wand to make sure that the milk is hot so that it doesn’t bring down the overall temperature of the milk, and the arm blows the steam into the milk to froth it all up! In order to ensure that the milk is the right temperature, a thermometer is going to be necessary! That is because milk boils at 212 degrees and you don’t want to be scolding your tongue because you haven’t checked the temperature before drinking. So, ideally, for a latte or a cappuccino, you want to be looking at somewhere between 139 and 158 degrees for your ideal temperature.
